Easy Cook & Healthy Salmon Potato Parcels

INGREDIENTS:

  • 1 potato, sliced into separate  thin circles (so that they will cook more quickly with the salmon)
  • about 4 tablespoons olive oil,
  • salt and pepper to
  • 2 salmon filets
  • 1 large orange cut in half
  • 1 lemon cut in half

 

DIRECTIONS:

 

  1. Preheat the oven to 400F. Use good quality foil, (ideally non stick) add half of the potato slices and place them in the center of the foil. Slightly separate the potatoes. Make sure potatoes are sliced very thin so they cook through in the same amount of time it takes the salmon to cook.

  2. Drizzle the potatoes with about 1 tablespoon of olive oil, season with salt and pepper, then repeat the process again with another sheet of foil and the remaining potato slices.

  3. Top each pile of the potatoes with 1 salmon filet.

  4. Drizzle each salmon filet with about 1 tablespoon olive oil.

  5. Squeeze half of the juice of the orange over one salmon filet and half the juice over the other filet.

  6. Squeeze half of the juice of the lemon over one salmon filet and half the juice over the other filet.

  7. Season each of the salmon filets with salt and pepper.

  8. Close and seal the foil into parcels, closing the parcel tightly so the olive oil and citrus juices don’t leak. Place the parcels on to a baking sheet. Bake in the oven for about 25 to 30 minutes. When cooked, carefully open each parcel to check if the salmon and potatoes are cooked through correctly. Return to the oven for a bit longer and if necessary, until done.
