Try making this easy delicious VEGETARIAN LENTIL SOUP


2 medium onions, 3 carrots, fresh tomatoes sliced – or a good quality tin of diced tomatoes, a large cloves of garlic, 3 bay leaves, a cup of water mixed with vegetable stock, 2 tablespoons of olive oil, a handful of thyme and salt and pepper to taste. 


How To Make This Easy Soup

  1. Add the onions, carrot, tomatoes, garlic, broth, thyme, and salt to a mixer. Puree until the consistency is smooth.

  2. Heat the olive oil in a medium pot over low heat. Add the pureed mix, cover, and slowly bring to a boil.

  3. Remove cover, reduce heat to a simmer, stir in the bay leaf and lentils. Cover pot halfway with the lid half. This allows some, but not all steam to escape. Allow to simmer for about 25 minutes or until the lentils are soft.

  4. Serve with some fresh whole meal bread. You can add creme fraiche, cream or cheese if desired. 

  5. Watch out for your kids as the soup will be very hot. Allow to cool through before serving to your kids.
